JIM DIVILIO and Jim Rehm may be the reigning kings of Long Island theme (but not theme-park) restaurants. Six years ago, they did the Cal-Mex thing by opening Baja Grill in East Northport (successful, until its sale to a corporate enterprise), and four years later, launched the Laguna Grille in Woodbury, which specializes in nuevo Latino cuisine. These days, they're trying to bring the backwoods of Tennessee to Centereach with the new El Dorado Southern BBQ.

This is the biggest of their whimsically decorated restaurants, a mess-hall-size space adorned with pigs, both neon and painted. While the food is generally quite good, authenticity doesn't seem to be a priority.

The focus is on serving a high-volume crowd at low prices. Forget vinegar-based, Memphis-style barbecue sauce; you'll get two versions (good ones) of the thick tomato-based kind. And, these days, the restaurant's slow-smoker isn't turning out whole barbecued chickens, only boneless breasts. In the future, the restaurant plans to offer bone-in quarters.

Young, caring and energetic servers start you off with a basket of warm tortilla chips accompanied by a peppy, roasted tomato salsa. That same salsa is paired with the super "Louisiana" calamari, tender squid in a light, puffy batter. But hush puppies, served with maple butter, are as heavy as cue balls. You'll be much happier with the "BBQ rib smackers," boneless rib tips, tender and smoky.

Rehm and DiVilio turn out dandy quesadillas; the "steak and 'shroom" version is fashioned of sliced skirt steak, fibrous and juicy, along with fried onion wisps, portobello mushrooms and Jack cheese. Pico de gallo, on the side, is lively, sparked with fresh cilantro. Do try the pulled pork sandwich, soft shredded meat bound with just the right amount of piquant barbecue sauce.

You'll encounter that same pulled pork on the "BBQ pig-out" platter, which also includes terrific pulled chicken and some of the best beef brisket sampled on Long Island. Mashed potatoes are a fluffy comfort.

Another winning combination features smoky barbecued pork ribs and grilled shrimp.  Steak fajitas have sizzle and savor. "Lightning Jones boneless BBQ chicken," a glazed
grilled breast, is good, if not traditional Southern barbecue; knockout, smoky-sweet baked beans were on the side.

Enjpy the moist, chocolateglazed, mini chocolate Bundt cake served with chocolate sauce, chocolate whipped cream and chocolate chips (the chips are extraneous).

If it's early, take the kids. If not, relax over one of El Dorado's knockout margaritas. Then, go home and listen to some good bluegrass music.
