Island Empanada is owned and operated by Roy and Kathy Pelaez. They have two beautiful daughters who are very active in the business. Roy had worked in the Bar and Restaurant business for over 20 years before joining the ARAMARK corporation where he worked for 15 years as a Senior Manager and was recognized for his innovative and unique managerial skills. For the past six years Roy has been making various Empanadas from his home for family and friends and dreamed of opening the only restaurant specializing in Empanadas on Long Island. A self taught cook, Roy has trained in both Puerto Rico and the Dominican Republic where he has mastered the art of Empanada making, in addition to crafting a secret Sofrito seasoning that gives the Empanadas an authentic “Taste of the Islands”. Roy is a graduate of C.W. Post and Sachem High School where he captained the Varsity Hockey Team. Kathy Pelaez is a Case Manager in Suffolk County. Kathy is a graduate of Dowling College and Sachem High School. Kathy is very active in the community and has held many PTA positions within her school district.
